Sometimes eight cookies are enough. This recipe keeps the ingredient list short and the batch small, with crisp edges and a soft center.

  1. Heat the oven to 175°C and line a baking sheet.
  2. Cream butter and both sugars until combined.
  3. Mix in the egg yolk and vanilla.
  4. Stir in flour, baking soda and salt. Fold in chocolate chips.
  5. Divide into 8 balls and place them apart on the sheet.
  6. Bake for 9 to 11 minutes. The centers should still look soft.
  7. Cool on the tray for 10 minutes.

The key timing

Do not wait for the centers to look fully baked in the oven. Cookies continue to set on the hot tray after baking.
